Chocolate mousse with rosemary and fleur de sel. Recipe


These days I wanted to try a chocolate mousse recipe that had a different touch and I remembered a recipe that I had seen a while ago on the blog In my life. So I decided on this exquisite rosemary and fleur de sel chocolate mousse. Rosemary and fleur de sel add a phenomenal touch to chocolate, so give it a try you won't regret it. The ingredients: 200grs of good quality chocolate (I used the Mijao variety of El Rey chocolates with 61% cocoa), 150 ml of milk, 250 ml of cream or heavy whipping cream (although for the next time I will use a little less cream, maybe 200 ml) 6 tablespoons of sugar, 1 sprig of rosemary and a pinch of fleur de sel.

Preparation: the milk is boiled in a pot or saucepan with the fresh rosemary leaves, once it reaches the boil the temperature is lowered and left for about 10 minutes over low heat so that the milk is infused with the aroma rosemary.

At the same time, the chocolate is melted in a bain-marie. Once it is melted and the milk has been removed from the heat, add the milk (from which the rosemary leaves are previously removed) with the chocolate and with a hand mixer stir well and cool, to so you can put the container inside a larger one with a little cold water.

In another bowl, whip the cream with the sugar and the fleur de sel and once the chocolate is cold, mix it with the cream, stir well until the mixture is homogeneous and finally place it in a container for serve and refrigerate for a couple of hours.

To serve the mousse I used individual plates and with these quantities I obtained 4 more than generous portions, it could be about 6 smaller ones.

At the time of serving it can be decorated with a sprig of fresh rosemary and sprinkled with a little fleur de sel. And to taste !!!!
