In this hot season it is clear that what they most want are fresh desserts, and if possible they do not require heat in the kitchen to prepare them. I really like this recipe for a quick peach mousse because in addition to being delicious, it can be prepared in a moment.
The fleshy pulp of peaches is great for making recipes like this one, since when mixed with whipped cream it leaves us with a very pleasant creamy texture. I like that the fruit is a little noticeable, but for a finer finish it can be crushed much more, using for example Thermomix.

Peel the peaches and chop, discarding the bones. Put them in a grinder or mincer and grind well until a fine paste is left. Chill in the fridge.
Begin to whip the cream, adding a little sugar to taste in the middle of the process, until it is very thick. Separate 2-3 tablespoons of cream and reserve it in a bowl in the fridge. Add the peach paste little by little, mixing with enveloping movements.
Correct the point of sweetness and serve in wide glasses. Garnish with a little of the reserved whipped cream, chopped pistachios, sliced chocolate, almond crocanti, etc., to taste. Serve very cold.
