  • Vanilla 5 ml
  • Pastry flour 225 g
  • Sugar 170 g
  • Chemical yeast 10 g
  • Salt 2 g
  • Cold unsalted butter (for the streusel) 60 g
  • Pastry flour (for the streusel) 100 g
  • Brown sugar (for the streusel) 75 g
  • Salt 1 pinch (for the streusel)
  • 1 tablespoon ground cinnamon (for the streusel)

How to make cinnamon streusel muffins

Preheat the oven to 180º C and prepare a tray with 12 cavities for muffins or muffins. Place the eggs, the melted butter, the milk, the liquid cream and the vanilla essence in a bowl and beat with a whisk.

Arrange the flour with the sugar, baking powder and salt in another larger container. Add the previous preparation and mix with the rods until obtaining a homogeneous dough without lumps. Distribute in the molds.

Chop the cold butter into small cubes and put it in a bowl. Add the cinnamon and the rest of the streusel ingredients and work them with your hands, rubbing and squeezing well, until you get a texture like crumbs or slightly damp sand.

Pour the streusel over the muffin batter, pressing lightly. Bake for about 20-25 minutes, until they have browned and when you click a toothpick it comes out clean. Wait a couple of minutes out of the oven, unmold and let cool completely on a rack.

With what to accompany the muffins

The cinnamon streusel muffins are delicious freshly made, even still a little warm, but if they are stored in an airtight container they will last well for a couple of days. Great with coffee, tea or a glass of milk, juice or some natural fruit.
