Apple and oatmeal puree muffins with almond milk: recipe for a tender breakfast

Preheat the oven to 180ºC and prepare a tray with 12 muffin tins, greasing them or covering them with suitable capsules. Pour the egg, sunflower oil, applesauce, almond milk and brown sugar into a bowl. Lightly beat with a few rods.
Place the pastry flour, the wholemeal flour, the oat flakes, the yeast, the baking soda, the salt and the spices in a large container. Mix with a few rods. Add the mixture of wet ingredients and work the dough gently. Incorporate the raisins, mixing with smooth movements.
Distribute the dough in the molds. Decorate if desired with a few extra oat flakes and a little brown sugar mixed with cinnamon. Bake for about 18-20 minutes, until they have grown and when pricked with a toothpick it comes out clean. Wait a few minutes out of the oven, unmold and let cool completely on a rack.
