Apple and oatmeal puree muffins with almond milk: recipe for a tender breakfast

At home we love traditional muffins as the most, but I can not help but also feel weak for muffins. I love them for breakfast because they do not have to be very sweet or carry as much fat as other pastries, as demonstrated by these applesauce and oatmeal muffins with almond milk.

Fruit purees are ideal to enrich the dough without adding many calories, they leave the crumb juicy and very aromatic, combining very well with spices. If you like dried fruits more like walnuts, you can exchange them for raisins without any problem. We could even add chopped fresh apple to make them even juicier. They have little sugar, if you are used to sweeter recipes you can increase the amount to your liking.

  • Apple puree 180 ml
  • Almond milk 250 ml
  • Brown sugar 90 g
  • Pastry flour 130 g
  • Whole flour 75 g
  • Oatmeal 30 g
  • 1 teaspoon chemical yeast
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Corinthian raisins to taste

How to make oatmeal applesauce muffins with almond milk

Preheat the oven to 180ºC and prepare a tray with 12 muffin tins, greasing them or covering them with suitable capsules. Pour the egg, sunflower oil, applesauce, almond milk and brown sugar into a bowl. Lightly beat with a few rods.

Place the pastry flour, the wholemeal flour, the oat flakes, the yeast, the baking soda, the salt and the spices in a large container. Mix with a few rods. Add the mixture of wet ingredients and work the dough gently. Incorporate the raisins, mixing with smooth movements.

Distribute the dough in the molds. Decorate if desired with a few extra oat flakes and a little brown sugar mixed with cinnamon. Bake for about 18-20 minutes, until they have grown and when pricked with a toothpick it comes out clean. Wait a few minutes out of the oven, unmold and let cool completely on a rack.

These oatmeal and applesauce muffins with almond milk are especially suitable for breakfast or snack. They are very aromatic and juicy, ideal for dipping in a glass of milk, and provide a good dose of energy. They last well two or three days and can be frozen without problems.
