Whole grain muffins. Recipe

Many of you already know my weakness for muffins, and that is that these little cakes that are made in the blink of an eye conquer anyone, today I prepared these integral Muffins that I show you, absolutely rich and perfect to enjoy on a cold afternoon with a good cup of tea or very hot milk, and if also accompanied by a rich jam, mmm ... irresistible.

I like to add a touch of spices to the dough, especially when I use whole wheat flour, I think they are the perfect union. This time I added cinnamon and nutmeg, but without a doubt you can add or remove according to your tastes, this recipe that I show you is my basic recipe, from there I remove and put ingredients according to what I give that day, so I encourage you to try it as you experiment with it adding new flavors, what do you think of a little orange zest ?.


300 gr. of wholemeal flour, 1 tsp of baking powder, 140 gr. brown sugar, 2 eggs, 200 ml. of milk, 100 ml. sunflower oil, 1 tsp. of liquid vanilla extract, 1’5 tsp. cinnamon, 1/4 tsp. ground nutmeg, a little brown sugar and nuts to sprinkle (optional)

How to make whole wheat muffins:

In a bowl we mix the dry ingredients, the flour, the baking powder, the sugar and the spices until they are well linked.

In another bowl we mix the liquid ingredients, first the eggs, we beat them lightly, then we add the vanilla, the milk, and the oil, we mix everything until they are well integrated.

In the bowl where we have the dry ingredients we make a hole in the center and deposit the liquid mass, we integrate it gently with care, it is not necessary to beat it excessively, just enough so that both mixtures are integrated.

Once we have our dough completed, we are depositing it in our muffin tray, and we are putting two tablespoons in each paper capsule (approximately 2/3 of its capacity).

Then we put it in the oven, previously preheated to 180 degrees, and let it bake for about 25 minutes or until we click and see that the needle comes out clean.
