Razors with coconut milk and ginger, the surprising appetizer to leave everyone speechless

One of the shellfish that I like the most is the razor clams. Although in general I always prepare them gratin in the oven, grilled or stewed in sauce, the truth is that they have many more possibilities. The first operation is to clean the blades well to avoid leaving any grit. To do this, we place them vertically in a container with water and salt and let them purge for an hour. If you want, for greater effectiveness, change the water after 30 minutes and leave them to finish the process for another half hour.

On the other hand, we prepare some garlic chips by frying some sheets without burning them and we make coriander oil, crushing some leaves with extra virgin olive oil, looking for an intense green color. We reserve while preparing the razors.

To cook the razors, we put them in a sealed packaging bag or in a vacuum bag if you have that possibility. Then, we cook them inside the bag in boiling water for only 1 minute. Then we cool them in ice water. We open the razors and remove the casing, placing them back in their shells. We calculate approximately four or five knives per person.

To make the sauce, we fry a shallot and a four cm piece of leek and before it turns brown, add the lime juice and coconut milk. Cook slowly and add the grated ginger and coriander. Finally, strain the sauce and serve it on the razors. We finish by adding a little grated lime peel, and decorate with fresh coriander leaves, garlic chips and a few drops of coriander oil.
