Shrimp and mango nems. Recipe


Nems are a specialty of Vietnamese cuisine in the form of a roll prepared with rice paper, which allow a large amount of fillings such as pork, fish and all kinds of vegetables. Today I have opted for the fresh union of seafood and fruit in these shrimp and mango nems, very simple to prepare and which constitute a delicious starter.

Rice paper is easy to find in the Asian produce zone of any department store. You must soak it for a few seconds to soften it in a little warm water with a pinch of sugar and a few drops of vinegar, and spread them on a clean kitchen cloth to make the filling. Although in Vietnam and Asian cuisine they are usually fried in peanut oil, in this case I recommend sunflower oil better than olive oil because it does not give them such a strong flavor.

Ingredients for twelve nems

  • 200 g of prawns, 120 g of mango, 12 wafers of rice paper, salt, pepper, 1/2 teaspoon of chopped coriander, a teaspoon of sugar, a few drops of vinegar, sunflower oil for frying.

How to make shrimp and mango nems

We will start by peeling the mango and cutting it into small squares. We arrange it in a bowl and add the prawns, salt the preparation and add a little chopped coriander. We booked.

While in a large tray we add warm water with a teaspoon of sugar and a few drops of vinegar, soak the rice papers for a few seconds and transfer them to a clean cloth. We add a tablespoon of filling to the lower end and close them as you can see in the step-by-step photos.

We prepare a wok or a deep frying pan with plenty of sunflower oil and heat it, frying the nems trying not to join each other. If you make more than what I propose, fry them in small batches of four at most. When we see them golden brown, more or less after two or three minutes, we are removing them to a source where we have placed kitchen paper to absorb excess fat and prevent them from sticking together.

The shrimp and mango nems are accompanied by lettuce, some fresh mint leaves and with small containers of soy sauce to dip them if you like. They are an original and delicious appetizer for a nibble dinner along with other starters.If you like fried foods, you can prepare them by steaming them for eight minutes.
