Noodles with prawns and soy vegetables, light recipe for wok

Today we are going to cook this wonderful light recipe, ideal for an improvised dinner, without sacrificing taste or good presentation. It is a simple dish, some noodles with prawns and soy vegetables that you can have prepared in about 30 minutes.

In addition, as I always remind you when the recipe is oriental style, it is good to give more use to the wok, which I know you have a bit abandoned, or if you do not have this utensil, to cook in a large pan that holds the temperature well . In any case, we are going to prepare a delicious and flavorful dinner.

Ingredients

For 2 persons
  • Prawns 8
  • Citronella 1 stick or stick of lemmon grass
  • Carrot 1
  • Radishes 2
  • Green asparagus 6
  • Noodles noodles 160 g
  • Extra virgin olive oil one tablespoon
  • Sesame oil (optional), a few drops
  • Dark soy sauce (2 tablespoons)
  • Water 30 ml

How to make a wok of noodles with prawns and soy vegetables

We start by chopping the lemmon grass or citronella into pieces, the carrot and the pepper in julienne strips not too fine and the asparagus in sections of about 3 cm. We put the pan or wok on the fire without oil and wait for it to heat up well.

Then we add a couple of tablespoons of extra virgin olive oil and if we have, optionally, we also add a few drops of sesame oil. Sauté the vegetables for a couple of minutes, stirring the wok or pan until they are al dente. Then we will top them with soybeans.

We cook the noodles in hot salted water for the time indicated on the package and add a tablespoon of dark soy and half a glass of water to the vegetables, stirring quickly. Add the drained noodles to the wok, sautéing them with the vegetables

We chop the radishes into thin slices and peel the prawns, taking advantage to give them a longitudinal cut and remove the intestine. In addition, they will be left with a beautiful shape. Add them to the wok, sauté the whole and serve very hot.
