Singapore-style curry noodles: recipe for a true Asian-style dinner

Do you like recipes with an Asian touch? I personally love them. Those contrasting flavors and how easy they are to prepare, makes us try a new kitchen dish of this style every week in my house. Today I bring you some Singapore-style curry noodles, perfect for a meal where we feel like mixing flavors and ingredients.

In this case they have an irresistible combination of seafood and pork, seasoned with a few spices, which makes it a super tasty dish and perfect for a different lunch or dinner.

Ingredients

  • Prawn tails 200 g
  • Sesame or sunflower oil 90 ml
  • Asian fish or oyster sauce 50 ml
  • Noodles 300 g
  • Garlic clove 2
  • Soy sauce, 1 tsp
  • Ground white pepper to taste
  • Sugar, 1/2 teaspoon
  • Egg 2
  • Pork loin 200 g
  • Onion 60 g
  • Carrot 1
  • Colored peppers, 1/2 red, 1/2 green, 1/2 yellow
  • Ground curry, 1 tsp

How to Make Singapore-Style Curry Noodles

We will start by sautéing the shrimp tails in a wok with a few drops of oil and half a teaspoon of Asian fish sauce. Remove from the wok and set aside.

Peel a clove of garlic and in a bowl add the soy sauce, the rest of the fish sauce, white pepper, sugar, mix well. We reserve.

We put a tablespoon of oil in a non-stick frying pan and add the eggs, allowing them to curdle like a French omelette. We remove and cut into small strips. We reserve.

In the wok add another tablespoon of oil, sauté the cubes of pork, add the onion, sauté for one minute, add the tricolor peppers cut into pieces and carrots, sauté for five minutes.

Add the curry, stir and reserve in the container where we had the egg strips.

We prepare the noodles according to the manufacturer's instructions, drain them well and add them to the wok in which we would have heated two teaspoons of oil. We added the rest of the ingredients that we had reserved and the reserved sauce. Sauté for a minute and serve hot.
