Olivíssimo, stuffed with virgin olive oil

Three Andalusian firms, Martínez Barragán de Córdoba, Embutidos Carchelejo and Productos de la Real Carolina de Jaén, market a new line of sausages made with virgin olive oil that replaces animal fats.

The Olivíssimo project is supported by the Junta de Andalucía and the Diputación de Jaén with the intention of revolutionizing the agri-food industry. They have transferred the patent for this initiative to these companies, which have agreed to initially consume 10,000 kilos of olive oil from Jaén of the Picual variety, although it is open to more industries in the meat sector. The sausages, mortadelas, chóped, pâtés, etc., made by these industries substitute up to 40% of animal fat (saturated) for the similar amount of monounsaturated fat. The benefit is obvious, in addition to achieving a higher quality product compared to health, they give new outlet to liquid gold. They have also established contact with Japan, the United Kingdom and some Eastern countries to export their products.

According to Felipe López, president of the Diputación de Jaén, "The substitution of animal fats for olive oil has many benefits for health and ennobles the final product."

We think it is a great initiative, it is not that we abuse the sausages, but knowing that they are healthier, we will not hesitate so much to consume them, in addition, we are sure that they will gain in flavor, don't you think?
