We buy a pork shoulder-it can be boneless or bone-in that have more flavor-with its skin. We begin by browning the skin and the entire surface of the meat on a grill or ribbed pan. When all the meat has a beautiful golden color, we put it in the CrockPot and program in Baja 4 and a half hours.
