Making bread is something that initially scares us all a bit, even though it is relatively easy, few ingredients and only a matter of “kneading”, the express Bread without raising is the easiest of those I have prepared, it does not require great knowledge and the result is extraordinary, a soft bread with a very fluffy crumb. It does not need any rising time, we just knead, bake and the result is what you see in the photo, a beautiful and very rich bread.

I got to know this recipe through Canelona, ​​who made it in a thermomix, and I have to say that it is a very comfortable way to make it, I have put the recipe both to prepare it manually as well as to make it in a thermomix. We could say that this recipe is the basic recipe, although you can make it from whole wheat flour, soy, even add some dried fruit, I leave another version of this simple and rich bread to your imagination.

Ingredients

305 gr. of strength flour, 175 ml. of water, 20 ml of olive oil, 15 gr. fresh yeast, 1 tsp salt.

How to make Bread express without raising:

We can make this recipe both in thermomix and manually, so I put both options:

In Thermomix:

We put the water, the oil and the slightly crumbled yeast in the thermomix glass, and we program 2 minutes, temperature 37, speed 2.

Then we add the flour and salt, and we program 10 seconds, speed 6, and continue with 2 minutes in spike speed.

We must have had a firm, elastic and manageable dough.

With the help of a spatula we remove the dough from the glass and pass it to our work table, which we will have lightly sprinkled with a little flour, once here, we knead it slightly until we get a round ball.

We brush our dough with a little olive oil and sprinkle it with flour, we make some small decorative cuts and we pass it to our mold, which we will have greased lightly with a little oil.

We can use a Pyrex mold or a cast iron casserole, in both cases it remains the same.

Now that we have our dough ready, we put it in the oven (cold, we don't have to preheat it) and we put it at 220º for 40 minutes, if we want it a little more golden, we will only have to leave it for a few more minutes.

Handbook:

We put the flour and the salt in a bowl and crumble the yeast on it, then add the water and oil and knead it all very well until we obtain a firm, elastic and manageable dough, this process does not take us more than 10 minutes.
