Mediterranean sesame and oregano bread, easy recipe to start as panarra


Although this recipe was told me by my sister as turkish bread recipe, I have seen similar breads in many other Mediterranean countries and in view of the ingredients that are reminiscent of those of the foccacia I have decided to baptize this recipe as Mediterranean sesame and oregano bread. It is a very simple bread recipe that is prepared in a very short time and requires little rest, so it can be a very good option to make homemade bread this summer.

You may not feel like turning on the oven, but with just 30 minutes of cooking, you will obtain a soft and fluffy bread, ideal to accompany cold cuts and cheeses that can come in handy if you suddenly have guests at home or if you want to make one dinner a little more special. In some areas of the Mediterranean, this bread is eaten by opening it in half and adding butter inside. You will see how easy it is to make and drink.

  • Sourdough 100 g
  • Wheat flour 225 g
  • Water 140 ml
  • Extra virgin olive oil 50 ml
  • Salt 5 g
  • Compressed yeast 10 g
  • Sesame seeds
  • Dried oregano

How to make Mediterranean sesame and oregano bread

Difficulty: Easy

  • Cooking 1 hour

Dilute the sourdough and yeast in the water and let them dissolve a little until it becomes cloudy. Add the flour, salt, and olive oil and mix until you get a somewhat sticky dough. Flour the table and lightly knead the ball until it is smooth and manageable. Let it sit for 30 minutes.

On a baking sheet covered with a parchment paper or a silpat, spread the dough, pressing with your fingers from the inside out as if you were making a pizza base. Leave the edges a little higher and mark your fingers pressing to spread the surface of the bread.

Varnish the bread with a few drops of the best extra virgin olive oil that you have at home and sprinkle the flatbread with the sesame seeds and some oregano leaves. While doing the whole process, preheat the oven to 250º Celsius, and activate the steam function or put a cup or mug with water in the lower part.

Bake the bread for 25 minutes, -the first 10 at 250º and the remaining 15 at 225º. Take out the bread and let it rest for 15 minutes before eating it so that it finishes cooking inside while it cools.
