These pancakes or pumpkin pancakes are perfect to take advantage of the pulp of one of those pumpkins that we have emptied to decorate our home for a terrifying night.
Ingredients for 10 pancakes
1 small pumpkin, 1 egg, 150 g of flour, 200 ml of milk, 15 g of icing sugar, 15 g of butter, 1 teaspoon of yeast and syrup to decorate.
How to make pumpkin pancakes
Although preparing pancakes is something quite easy and fast, the part of emptying the pumpkin without breaking it in half is at least cumbersome. If you have never done it, take it easy and entrust yourself to a benevolent God so that everything goes well and you do not spoil the pumpkin.
Once we have managed to extract the pulp, the rest is sewing and singing. In a suitable container, we pour almost all the milk and the pumpkin and crush it well until it becomes a creamy puree. Then we add the egg and the sugar and beat slightly.
Now, in a bowl we mix the flour with the puree, stirring well with the rods while we add the rest of the milk, the yeast and the butter until we obtain a liquid dough similar to that of the crepes. We let it rest for a few minutes while we collect everything and go to the stove.
In a very hot small frying pan, or a flat iron, we pour the dough little by little with a ladle. The measure of each pancake depends on the size we want, but the indicative measure of a ladle or a little less is good. The mechanics are very similar to preparing crepes, dough, round and round, to the plate and we continue.
To serve, we can accompany the pancakes with all kinds of syrup, but I have to say that the strawberry is the one that, for me, combines best with the pumpkin.
