We start by coating the base of a 24 cm rack mold with baking paper and butter-smearing its walls. We put the butter and the chocolate in a saucepan, and this on another to the water bath, taking care that the base of the same is not in contact with the water.
We will let the mixture cook, stirring gently until the butter and chocolate have melted. Afterwards, we let them cool down a bit and then add the sugar followed by the egg yolks, one by one.
We place the egg whites with a pinch of salt in a clean bowl, and beat until reaching the point of snow. Then slowly add them to the chocolate mixture and pour the dough into the mold, smoothing the surface.
Bake the cake at 180ºC for about 45 minutes or until it is pricked clean with a needle. The surface must remain firm and the center must tremble when shaking the mold. Let cool without removing the mold and serve it sprinkled with ground sugar.
