125 grams of flour with incorporated yeast (special biscuits), 175 grams of butter at room temperature, 3 separate L-size eggs yolks and whites, 175 grams of white sugar, 250 grams of ricotta, 125 grams of blackberries.

How to make ricotta and blackberry cheese cake

We will start by preheating the oven to 180ºC. Butter and sprinkle with flour a mold about 22 cm in diameter. Whip the butter and sugar with a whisk until it has doubled in volume and has turned into a pale cream. Mix the lightly beaten yolks and the crumbled ricotta cheese.

Beat the egg whites until stiff until peaks form. Carefully add them to the previous mixture. Add the yeast flour. Incorporate gently until you see everything well mixed. Pour a not very thick layer of the mixture in the bottom of the mold. Place some berries. Keep repeating this operation until the dough is finished, reserving some berries for the final decoration.

Bake for approximately 35 minutes or until you prick it with a skewer it comes out clean. Leave it for about ten minutes and unmold so that it finishes cooling on a rack.
