Penne rigate with sausages. Recipe
This recipe that I offer you today, penne rigate with sausages, gratin, is a dish that has guaranteed success, especially if there are children involved, it is also a balanced dish, easy to prepare and very economical, for all that I usually prepare it often.
I invite you to adopt it in your repertoire, and make variations on it, ham instead of sausages, fine macaroni instead of penne rigate, a mixture of cheeses instead of emmental.

Ingredients for 4 people.
400 gr. of penne rigate (or another macaroni that you like), 1 onion, 1 green pepper, 4 large ripe tomatoes, 200 gr. pork or chicken sausages (of exceptional quality, without extraneous additives), 2 bay leaves, 2 pinches of oregano, Emmental cheese (or any other that you like), extra virgin olive oil (EVOO) and salt.
We chop the sausages, finely chop the onion and pepper and grate the tomatoes and fry them in oil (a little), in that order. First the sausages, when they change color we add the onion, the pepper and the bay leaf and, when they are cooked, we add the tomato and let it cook for 15 minutes over low heat, we add the oregano, we turn and set aside.
Meanwhile we cook the pasta in boiling salty water, the time indicated by the manufacturer.
We drain the pasta, mix it with the sauce, place it in a baking dish, cover it with the grated cheese and grill until the surface takes on a nice toasted color, about 5 minutes is usually enough.
Preparation time: 25 minutes
These penne rigate with sausages, au gratin, are a luxurious dinner, we can accompany them with a good red wine or with a cold beer.
If children are not going to eat and you like spicy, I advise you to add a chopped chilli to the sauce, you will not regret it.
