Baked boneless leg of lamb with vegetables: my family recipe
I don't know why we rarely eat lamb meat in Spain. It is a tender and tasty meat that we practically only consume at Christmas time or when we grill the classic cutlets. As I really like this meat, I wanted to make this boneless leg of lamb baked with vegetables, to encourage you to consume this meat from time to time.
This stew is also great to take to work since it heats up very easily and is juicy and appetizing in one or two minutes in the microwave, making it a practical dish that we will make without staining practically anything. Although I made a single leg of lamb, if you are more at home you can make two simultaneously and freeze the remaining rations.

- Perrins sauce 1 tablespoon

Ask the butcher to prepare your leg by removing the bone and leaving it in one piece. Then tie the leg to keep its shape. I cut the "flap"from the end to roast only the lean part, keeping the piece in the freezer for later use stewed with potatoes and mushrooms, one of the dishes that we like so much.
Once the exterior of the boned leg is browned on all sides, we reserve it. Chop the vegetables into beautifully sized chunks, and place them on a baking sheet. We add a pinch of salt and a good drizzle of olive oil and cover them with a few sprigs of thyme.
We put the leg of lamb on top, add the soy sauce and the Perrins, and cook it in the oven at 160º for half an hour. We turn the meat, remove the vegetables and add the water, leaving another half an hour at the same temperature.
We finish by raising the oven to 190º and letting it cook until we see that the vegetables are tender and the meat has taken a beautiful golden color. Fileteamos and serve two slices on each plate accompanied by vegetables as a garnish.
