If peppers are typical of Mediterranean food and do not represent anything very new in the world of cuisine, they have become almost indispensable for very interesting dishes that we can make this season. Stuffed peppers are also an interesting alternative and we usually make them with beef.

Today I propose this different and simple recipe for stuffed peppers with chicken and jalapeño peppers. Due to the presence of chili, this dish is spicy which will give it a slightly different twist to what we might think for a stuffed pepper. You will not need very complicated ingredients and you will simply need to find a jalapeño pepper or similar. The idea is to make it spicy.

  • Mozzarella cheese 150 g
  • jalapeno pepper 1
  • Extra virgin olive oil 30 ml

How to make peppers stuffed with chicken with jalapeño peppers

To start this recipe we are going to clean the peppers to cut the top horizontally. With a knife we ​​remove all the seeds and veins taking care not to damage the pepper body. We boil the chicken breast for about 20 minutes over high heat. When it is ready we unpack it and let it cool for a few minutes.

Chop the onion that we mix in a bowl with the shredded chicken. We chop the jalapeño pepper that we integrate with the other ingredients along with the olive oil, salt and a little pepper. We cut the cheese into slices. We place a part of the cheese in the bottom of each pepper that we fill with the chicken and we finish with more cheese. Season the mozzarella with salt and pepper. Bake at 180ºC for about 25 minutes.

I recommend serving these delicious peppers stuffed with jalapeño chili chicken with white rice or pasta. You could eventually taste them with roasted vegetables. A good glass of red wine should not be missing when eating this dish.
