I love how soft cheeses are combined with red fruit jams, and if this union is usually part of my cheese boards, this time I wanted to combine these two ingredients in a chicken, brie and blueberry pizza. If you like sweet and salty flavors, it is a pizza that will captivate you.

As always, you can make the base of the pizza dough at home, highly recommended, or buy a blank one and put the filling on top. There are decent quality commercial masses that can get us out of a bind when we don't always have time.

  • Wheat flour 400 g
  • Warm water 200 ml
  • Extra virgin olive oil 50 ml
  • 1 tablespoon dry baker's yeast
  • 1 teaspoon sugar
  • Brie cheese 200 g
  • Lingonberry jam 180 g
  • Chicken breast 200 g
  • Small chives 1
  • Walnuts 30 g
  • Extra virgin olive oil
  • Salt

How to Make Chicken Brie Cheese Blueberry Pizza

We will start by preparing our homemade pizza dough. To do this, add the warm water and oil, dry yeast and sugar in a bowl. We stir with a few rods and leave ten minutes to check that the yeast foams and works correctly.

Then we add the flour with the salt and knead with our hands until we achieve an elastic dough that does not stick. We leave it in a container in a warm place for an hour to light. When time passes we degas and stretch it on a baking tray or pizza stone, it will still grow a little while the filling is prepared. We preheat the oven to 220 degrees with heat from below.

We continue chopping the chives into thin slices and the chicken breast into strips. We put a frying pan on the fire and heat the olive oil, sautéing the chives over low heat for a few minutes, once done we remove it and sauté the chicken. We salt the meat. We spend everything for a plate and we reserve.

We spread the blueberry jam on the base of the pizza as if it were the classic tomato sauce. We spread the chives, the pieces of brie cheese and the chicken on top. We spread the walnuts in pieces. We bake for 25 minutes.
