- Ground cumin (1/2 teaspoon) 2 g
- Homemade fried tomato 50 g
- Salt (1/2 teaspoon) 2 g
- Ground black pepper (1/2 teaspoon) 2 g
- Coconut milk 400 ml
- Extra virgin olive oil
- Fresh parsley or coriander

We cut the chicken breasts into bite-size pieces. Chop the chives and grate the garlic clove and ginger. Chop the chili, only the meat (without the seeds).
Heat the oil in a frying pan and fry the chives for a couple of minutes, over medium heat, until golden. Add the garlic, ginger and chili, stir. Add the tomato and fry for a minute before adding all the spices and stirring well.
Then add the chicken and brown over high heat for a few minutes, stirring until smooth. Pour the coconut milk into the pan, reserving 100 ml in case the thickness of the sauce should be adjusted later. Cook over medium heat for approximately 15-20 minutes.
After the cooking time, let it rest for a few minutes so that the flavors settle and the sauce thickens slightly. Sprinkle with chopped fresh parsley or cilantro when serving.
