Kentucky style chicken. Recipe


Surely you all have wondered how they make fried chicken at the KFC so that it has that crunchy and spicy batter. Well, here we are to answer your questions and help you prepare it fairly quickly and easily with this Kentucky-style chicken recipe.

Although there are many variants of the recipe circulating on the internet, most have in common a very similar combination of spices and, above all, a very similar process, so you can adapt it a little to your taste or what you have in the grocery store and the pantry that the end result will be quite similar if you follow the steps of the batter.


  • For the marinade: 1/2 chicken in pieces (better without skin), 300g of flour to coat, 2 tablespoons of sweet paprika, 1 teaspoon of: hot paprika, garlic powder, onion powder, curry, 1/2 teaspoon of: tarragon, thyme, dill, salt and a pinch of pepper
  • For the coating: 200g of flour for coating, 1 tablespoon of sweet paprika, 1 teaspoon of salt, 1/2 teaspoon of: thyme, dill, curry, hot paprika and garlic powder

How to make Kentucky-style chicken

The key to making Kentucky-style chicken is none other than the marinade, which is a kind of dough that we will prepare with the coating flour and spices. To prepare it, normal flour and an egg or even 1/3 of the flour is corn.

In a large enough metal bowl add the flour and all the spices from the marinade. We stir well and pour cold water (approximately 350-400ml) until a homogeneous liquid mass is formed, similar to that of crêpes or pancakes. Submerge the chicken pieces in this dough, cover with plastic wrap and marinate for at least one hour, although it is better to be three.

Once we have the marinated chicken, we prepare another metal bowl in which we will mix the 200g of flour to coat with the spices. We will pass the chicken pieces through this flour before frying them in plenty of oil. You have to do it very gently so that those irregularities so typical of Kentucky chicken are formed.

The trick so that the chicken is crispy on the outside and done on the inside is to start with a very strong fire for a few seconds, so that the batter is fixed, then we lower the heat a little so that they are done over medium heat for seven or eight minutes to finally raise the fire and give it that appetizing gold.
