Chicken stews are very useful throughout the year, but now with the good weather that fast and lighter dishes fancy, I propose a recipe for Mediterranean-style chicken stew with green olives and capers, perfect to enjoy as a daily menu in one of these spring days.

Vegetables and chicken stilts make up this light dish of stew in which you can use the part of the bird that you like the most, respecting the different cooking times, whether it is whole sliced ​​chicken, stilts as in my case or even breast fillets.

  • Purple Onion 2
  • Red pepper 2
  • Garlic clove 2
  • Extra virgin olive oil 30 ml
  • Saffron, a few strands
  • Chicken soup 300 ml
  • Sweet paprika, 1/2 teaspoon

  • Capers 25 g
  • Lemon juice 1

How to make Mediterranean-style chicken with olives and capers

We will start by heating a saucepan with the oil and sautéing the split chicken stilts until golden. Chop the onions into pieces and the bell peppers into strips, as well as the small garlic cloves.

Once we take the chicken out of the saucepan, brown it and fry the pepper and onion for two minutes, add 50 milliliters of water, cover the pot and cook the vegetables for 10 minutes.

Once the time passes we add the minced garlic cloves, and put the meat back in the casserole. Add the saffron and chicken broth, season with the paprika and season with salt and pepper.

Bring the liquid to a boil and add the olives, capers and lemon juice. Cook with the uncovered pot for 20 minutes or until the meat is tender. Garnish when serving with some fresh basil leaves.
