Baked chicken with fine herbs

This weekend we wanted to make a small family meal and since we are going to be three adults and two children, we have made a baked chicken with fine herbs, a recipe that we all like and that is perfect to share between 4 or 5 people .

You already know that we love roast chicken in the oven and at home we prepare it frequently using different recipes. Sometimes we choose to do it with lemon, or we prepare a baked chicken with orange, and almost always, we do it remembering the advice of my grandmother's baked chicken recipe.

  • Provencal herbs to taste (I used basil, thyme and rosemary)
  • Lard 10
  • Potato for garnish 3

How to Make Baked Chicken with Fine Herbs

Once the chicken has been thoroughly cleaned and any nibs it may have removed, season with salt and pepper and put half an onion and half a lemon inside, and a good branch of each of the fresh herbs, so that it perfumes the chicken while it is roasting.

On the other hand, we prepare a "bed" with potatoes cut into thick slices and julienned onions, arranged on a baking sheet. On the potatoes we also distribute some aromatic herbs to increase their presence.

On that bed we put the chicken, smearing its exterior with lard to get a spectacular flavor and color. On top we put some thyme and rosemary leaves and put it in the previously preheated oven.

Bake for 80 minutes, at a temperature of 190º, turning the chicken every 20 minutes so that it browns everywhere. At the end, we gratin for 5 minutes to give that nice final color to the dish. By turning the chicken, we remove the potatoes so that they are also made everywhere

With what to accompany the baked chicken with fine herbs

This recipe for baked chicken with fine herbs is very good with its garnish of baked potatoes with onions, which collect all the flavor that the chicken releases. To accompany this roast, there is nothing better than a fresh and degreasing salad with lettuce, tomato and a good vinaigrette.
