Baked chicken glazed with tangerine, vermouth and honey: recipe for a luxury dish without complications

The colder months not only want to turn on the oven more to make breads and cakes; At home we also enjoy roast chicken recipes more than ever. Also, I would say that autumn-winter products are offered much more to accompany poultry meat in refreshing dishes. This baked chicken glazed with tangerine, vermouth and honey is in any case a festival of flavors and aromas that is very easy to prepare.

The hindquarters of chicken -thigh and thigh- with skin are perfect for roasting and serving in portions with minimal complications when it comes to dividing between different diners. Inspired by this recipe, the addition of tangerines and thyme take me to the Murcian countryside and further enrich an easy recipe that remains luxurious with little effort.

  • Chicken hindquarters 2
  • Tangerine 2
  • Extra virgin olive oil 30 ml
  • Honey 20 ml
  • Red vermouth 40 ml
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried thyme
  • Ground black pepper
  • Salt

How to Make Baked Chicken Glazed with Tangerine, Vermouth, and Honey

Preheat the oven to 200º and prepare a suitable source. Let the chicken warm outside of the refrigerator so that it is not too cold; dry with kitchen paper and remove any excess fat or feathers.

Place the pieces in the source, water with olive oil and massage well everywhere. Season lightly and add the paprika; squeeze the juice from the first tangerine and massage again to distribute it well. Bake for about 30 minutes.

Cut the other tangerine into slices -previously well washed-. Combine the honey with the vermouth and thyme and spread all over the chicken, taking care not to burn ourselves. Return to the oven until it is done, about 15-20 more minutes.

Remove the chicken pieces and the roasted tangerine and remove the juices from the source, straining them with a sieve or fine mesh strainer. Reduce a little in a saucepan if necessary, removing part of the fat.

What to accompany the glazed baked chicken

A baked chicken as aromatic as this glazed with tangerine, vermouth and honey I think asks for a garnish of mashed potatoes, to wash it well with the sauce and juices. But of course we can choose another accompaniment to our liking, such as simple white rice, couscous, whole wheat or simple roasted or cooked potatoes.
