Rosemary chicken with black olives and capers

At dinner time I almost always find myself wondering what to prepare. With this recipe for rosemary chicken with black olives and capers I have solved it, because everyone at home likes it, it is easy to cook, and also an economical dish.

I have prepared it this time with chicken stilts, but you can use a whole chicken in pieces, wings or even turkey if you like more. Anyway, it is a delicious recipe and full of flavor.

  • Extra virgin olive oil 30 ml

  • Red pepper 1
  • Green pepper 1
  • Tomato 450 g
  • Sweet paprika, 1 teaspoon
  • Bacon 50 g
  • White wine 250 ml
  • black olives 90 g
  • Capers, 2 tablespoons
  • Fresh rosemary to taste
  • Salt and pepper to taste

We will start by heating the oil in a saucepan. On the other hand, salt the meat and add black pepper. We often chop the fresh rosemary. We fry the chicken for five minutes together with the rosemary. Once golden we remove it to a tray.

Add the sliced ​​peppers, the chopped chives and the bacon to the pot. We sauté it for another five minutes, add the paprika.

We put the chopped tomatoes with their juice, the wine, the olives and the capers in the saucepan. We bring to a boil. Add the chicken stilts. Cover with the lid and cook for 20 minutes. We remove the lid and cook for 10 more minutes.
