Roast chicken massala with quinoa. Recipe
Yesterday I thought about roasting chicken, but listening to music while I was painting my kitchen, I remembered. It already smells like summer, that warm smell that reminds us that winter has been very long and we need vacations. Holidays. The beach. Free time. Beach bars. Sardines. So I put the chicken in a kind of marinade, got in the car and went to my friend Encarnita's fish shop. I bought sardines.
Today, after all yesterday and the night the chicken in marinade, I have prepared this recipe for roast chicken massala with quinoa. And it is that there must be everything in the diet, sardines, chicken, quinoa. There is nothing like being hungry and having food to throw at your throat. A fortune without a doubt.
The ingredients of grilled chicken massala with quinoa
1 chicken cut into 4 quarters, 2 slices of Iberian bacon, 1 glass of white wine, the juice of one lemon, 1 teaspoon of tandoori massala, 1 branch of thyme, 1 teaspoon of oregano, extra virgin olive oil (EVOO), 200 gr. quinoa, lamb's lettuce or other green leaves to accompany and salt.
We cut the chicken into quarters, we clean it of the excess fat and viscera, we wash it and we put it in a deep oven dish, with the wine, the thyme, the sliced bacon, the lemon juice, a drizzle of EVOO and the massala, cover and leave in the refrigerator for 12 hours.
After this time, we turn the chicken pieces, sprinkle with massala, oregano and salt. Cover with baking paper and bake for 1 hour at 180º. Uncover and bake 15 minutes more, until the sauce thickens a little and the chicken skin is browned.
We make quinoa as indicated by the manufacturer, which is usually 20 minutes of cooking in twice as much water as quinoa, with a string of EVOO and salt. We present the chicken accompanied by quinoa and green salad, salted with the cooking juice and a few drops of EVOO in the salad and quinoa.
