Chicken in sweet and sour grapefruit and sesame sauce: quick recipe
In my parents' house there is always a pantry well loaded with citrus, because we love them and because my grandfather and my uncle have some great trees in their houses in the Murcian orchard. However, I recognize that grapefruit is often forgotten, but I really like its bitter taste and I think it is also great for cooking. This chicken recipe in sweet and sour grapefruit and sesame sauce is a good example.
If we have a few hours to let the chicken meat marinate, the result will be much better, but otherwise, half an hour will be enough to get a very tasty dish. In this case I have left the prominence to the bittersweet flavors, but a spicy touch with a chopped chili or a little chili paste or harissa would add a very good contrast too.

- Garlic clove 1
- Fresh ginger (piece) 1
- Red grapefruit 1
- Sesame oil (olive or sunflower failing) 5 ml
- Apple cider vinegar or rice 5 ml
- Apricot or peach jam 30 ml
- Honey 5 ml
- White wine 30 ml
- Vegetable or water chicken broth 120 ml
- Sesame seeds (a couple of tablespoons) 20 g
- Ground black pepper
- Extra virgin olive oil

Dry the chicken breasts with kitchen paper, remove any excess fat and cut into strips. Arrange in a bowl. Chop the red onion, the garlic clove and the peeled ginger. Add to the chicken along with the squeezed grapefruit juice, oil, vinegar and a little salt and pepper. Let marinate for at least 30 minutes.
Heat a little oil in a frying pan and brown the chicken, draining and reserving the marinade. When it is well browned, remove and reserve. Pour the marinade with the apricot jam and honey in the same pan, mixing well. Add the wine and water, stir and let it reduce to low heat about 10 minutes. Add sesame at the end and correct with salt.
With what to accompany the chicken in sweet and sour sauce
We can serve the sauce on top of the meat or return it to the pan if it has become too cold. We will serve this chicken in a sweet and sour grapefruit and sesame sauce with a garnish of white rice, better if it is a basmati type, or with some grilled vegetables.
