Chicken in mango curry sauce. Recipe

I have always thought that a fruit like mango would combine deliciously well with aromatic sauces full of spices, and finally I was able to verify it. This recipe for chicken in mango curry sauce is a festival of flavors, fresh and light thanks to the fruity notes. It is a sweet sauce but not cloying but refreshing, although you could add some chilli to make it spicy.

Luckily we have more and more quality mangoes in any store. Look for ripe, aromatic mangoes that are soft to the touch, so that they melt in the sauce more easily. This is a dish that feels great on these cold days, very hot, although it can also be tasted more temperate.

  • Chicken breast 500 g
  • Ground curry 5 g
  • Hot paprika 2 g
  • Sweet onion 1
  • Fresh ginger 5 g
  • Garlic cloves 3
  • Laurel leaves 3
  • Cinnamon stick 1
  • Yellow or black mustard seeds 3 ml
  • Cumin grain 3 g
  • Ripe small mango 1
  • Ground turmeric 3 g
  • Coconut milk or cooking cream 250 ml
  • Ground black pepper
  • Salt
  • Extra virgin olive oil
  • Fresh parsley or coriander

How to make chicken in mango curry sauce

Dry the chicken with kitchen paper and remove any excess fat. Cut into bite-size pieces and season with salt and pepper. Heat a little olive oil in a good frying pan and add the chicken. Sauté over high heat until golden brown. Add the curry spices and the paprika, make a few turns and remove. Peel the mango and crush the pulp or crush, if it is not very ripe.

Crush the onion with the minced ginger, the garlic cloves and a little water with a chopper or breath processor. Clean the chicken frying pan, heat a little oil and add the bay leaf, cinnamon, mustard seeds and cumin. Brown until they release their aroma, being careful not to burn them. Add the onion paste and cook, stirring occasionally, for about 12-15 minutes.

Remove the bay leaf and cinnamon, add the crushed mango, turmeric and coconut milk or cream. Mix well and let reduce for a couple of minutes. Return the chicken, mix and season. Cover and cook for about 5 minutes. Uncover and let reduce the sauce about 10 more minutes over low heat.

This chicken in mango curry sauce can be served freshly made or prepared in advance, as the flavor is accentuated after a few hours. The best garnish is a good aromatic long rice, to take advantage of the delicious sauce. We can add coriander or chopped fresh parsley at the time of serving.
