To make the marinade or homemade marinade, we prepare our mixture of condiments and homemade Provencal herbs. You can use the spices you have in the pantry or even a bag of the prepared ones. I used 2 tablespoons of paprika, 2 tablespoons of tex-mex mix, 1 tablespoon of Provencal herbs, 1 tablespoon of dried oregano and another tablespoon of thyme. Then we add the liquor and the water. You can use any liquor or even not add it.

We mix everything well and introduce the chicken slices, leaving them in the fridge overnight. In the morning, we remove the slices from the marinade and drain them. It is not necessary to dry them as they will dry in the oven. We have them in a baking dish and add the potatoes, cut into irregular pieces.

Add salt and a splash of olive oil and roast them for about 40 minutes in the oven with heat up and down at 200ºC. Every ten minutes, we stir to turn the ingredients and cook evenly. In the process, the potatoes will take on color and will be impregnated with the herbs and spices.

At first, the chicken slices will release some liquid, which is good for the potatoes to be very tender inside. Afterwards, everything will dry up and we will have the potatoes and the chicken delicacies ready, crispy on the outside and full of flavor with our homemade marinade.
