Cherry and coconut lollies: a light recipe to refresh ourselves in the summer

I have an ice cream maker but for reasons of space at the moment it is waiting for me at my parents' house for when I visit in the summer. However, that does not prevent that as soon as the heat appears, it prepares all kinds of so-called ice creams, such as these cherry and coconut light poles.

Natural bottled coconut water feels great when temperatures are hotter, delicious served cold. Today it is easy to find in any supermarket, although it is advisable to choose a product that is not from concentrate. In any case it is ideal to combine it with other fruit when it comes to making some poles.

  • Coconut water 330 ml
  • Juicy and sweet cherries or pillors, a handful
  • Sugar or sweetener necessary (optional and dispensable)
  • Vanilla essence optional 2 ml

The recipe could not be simpler, although it can be varied a little to taste. The quantities will depend on the size of our molds and the number of poles we want to make. It is convenient that both the coconut water and the cherries are very cold.

We wash the cherries, dry them well and break them, removing the stone. We crush them with a mincer, grinder or similar, until they have a fruit puree texture. I like to feel the fruit on the pole, but you can go through a Chinese to make it finer if desired. Taste the sweet spot and add sugar or sweetener to taste if desired, as well as vanilla.

Fill 1-2 fingers from the base of the pole molds with the cherry puree. Take to the freezer and wait for it to harden, about 30-45 minutes. Add another layer of coconut water and repeat the operation alternating with the cherries until the mold is full. Insert the sticks and freeze at least 1 hour before removing from the mold.

With what to accompany the light poles

These light cherry and coconut popsicles are very sweet on their own if the fruit is good, and are most refreshing at any time of the day. Both fruits combine very well, complementing each other perfectly. If we want the distinct layers of flavor to remain, we have to wait longer for them to freeze, although I like more that the fruit mixes lightly with the coconut. They can be taken at any time of the day, for dessert or snack.
