Lemon polpettone. Recipe
Lemon polpettone is a very Italian and very bombastic way of calling a lemon mince pie. Polpettone is a traditional dish of Italian cuisine, whose peculiarity is that it is worked like a gigantic meatball, floured and lightly fried before cooking it in the oven.
Although I have modified it slightly, I found this recipe in an old cooking magazine that I still have, it particularly caught my attention since I want to spend a lot of lemons that I have at home and I don't know where they came from. After finding out about this dish online, I have realized that it is very common to make polpettone stuffed with countless things, boiled egg, vegetables or ham for example or wrapped in cabbage leaves, puff pastry or bacon, but these recipes will be for another day.
400 grams of mixed minced meat, 100 grams of bacon, 3 lemons, 2 eggs, 4 slices of bread, 1 onion, 2 cloves of garlic, 1 glass of white wine, oil, flour, a little milk, parsley, oregano, bay leaves, salt and pepper.
How to make lemon polpetonne
We preheat the oven to 200º C. We chop the bacon. Peel and chop the onion. We remove the crust from the bread and sauté it a little milk, drain it well.
In a bowl we mix the meat with the bacon, the onion and the bread. We also add 1/2 teaspoon of oregano, a pinch of parsley, the zest of a lemon, a pinch of salt and the eggs. We stir and mix everything perfectly.
We form a meat roll, flour it and brown it in a pan with oil at medium temperature. We transfer it to a baking dish, water it with the glass of wine, add a couple of bay leaves and put it in the oven.
We cut the lemons into small pieces, and laminate the garlic, we will add it to the polpettone 30 minutes after it is in the oven and we take the opportunity to water the polpettone.

We can serve the lemon polpettone both hot and cold from the fridge, and from one day to the next.
We can accompany it with a salad, with a little boiled rice or with mashed potatoes.
We have to take into account that the lemon flavor is very marked, if we do not want it to taste so much, we can lower the amount of grated peel and put only half for example.
