Quick and Easy Desserts I: Creamy Lemon Dessert

With this recipe, we started our special dedicated to easy and quick desserts, with which to give a joy to the family or guests, without the need to complicate our lives or spend all day in the kitchen. As a first choice, a creamy lemon dessert, which will allow you to look great, in less than 15 minutes.

The sweet taste of condensed milk and the powerful acid of the lemon, fit perfectly, and produce a contrast that leaves no one indifferent. It is an intense mixture, but very pleasant for friends to combine sweet and acidic flavors. If you like sweeter desserts, you can put a thin layer of red fruit jam on top.

Ingredients for 4 people

  • The juice of three lemons, a small bottle of condensed milk, 250 ml of evaporated milk, the zest of a lemon, peppermint and red berries to decorate

How to make the creamy lemon dessert

We start by washing the lemons well, because we are going to use the zest of one of them and we want to prevent it from having any remaining pesticides, fertilizers or chemicals. Grate the lemon rind and reserve it. Next, we are squeezing the three lemons, to save their juice.

On the other hand, we open the can of condensed milk and put its contents in a wide bowl. Now that nobody sees us, after pouring the condensed milk into the bowl, we can scrape the sides of the can with a spoon and remember when we did it when we were little.

On top of the condensed milk, add the evaporated milk, and mix it well with some rods. If you do not find evaporated milk, you can use cream to cook, or if not, whole milk, although in any supermarket you will find this evaporated milk in cans or bricks, without major difficulty.

Once mixed, add the lemon juice to the mixture. Apparently it seems that the milk is cut, but if you move it with the rods, you will see how suddenly, in less than a minute, it curdles and thickens almost magically. All that remains is to add the lemon zest shavings and put it in the fridge until you can enjoy it.

I like to decorate this creamy lemon dessert glass with some color, this time with a mint leaf, a raspberry and a little wafer. I recommend serving it in small glasses like the one I have used or even in smaller bowls since it satiates enough. You can serve it with a shot of your favorite liquor.
