Stew of beans with lamb. Recipe

I am crazy about the stews, the stews, the homemade stews, they are so comforting ...

The stew has the peculiarity, compared to the other "cooked", that it usually has a tomato and onion sauce, or raw. The pot, the pot, the stew is not normal that they take it.

In any case, they are all unsurpassably rich, like the dish that I offer you today, some beans with lamb in pottage.

Ingredients for 4 diners. (will be left over)

400 gr. of beans, 150 gr. of lamb brisket, 1 point of ham, 2 bay leaves, 1 pinch of ground cumin.

And for the sofrito.

1 large ripe tomato, 1 onion, 2 cloves of garlic, some parsley leaves, 1 tablespoon of paprika and salt.

Elaboration.

The night before we put the beans to soak, covered in water.

The next morning we fill a pot with cold water, put the beans, the chopped lamb, the ham, and the bay leaf in it and put on the fire.

Soon it will start to foam, remove the foam and, as soon as it is clean and start to boil, add the cumin and leave to do, 2 to 3 hours in a conventional pot and 1 hour in a pressure cooker.

While we make the sofrito that gives the dish its name:

To do this, grate the tomato and the onion and sauté with the minced garlic and a pinch of salt, in a frying pan with a drizzle of oil, once all stir-fry add the paprika and parsley, remove from the heat.

When the beans are almost tender we add the sofrito and cook, all together, 10 minutes.

Preparation time: 1 to 3 hours.

Tasting.

It starts to get cold, it is necessary to eat "well", so help yourself with a pottage dish, fill your glass with wine, take a large spoon and savor this dish, slowly, salivating well, and charge your batteries that it is cold outside and you have to continue with the task.
