Although we enjoy it a lot in the classic garlic rabbit recipe, we will also be delighted with this tomato rabbit, prepared over low heat and ready in just over 30 minutes. Listen to me, this one will never forget you.

How to make rabbit stew with tomato

Difficulty: easy
  • Total time 1 hour
  • Elaboration 15 m
  • Cooking 45 m

We start by frying the rabbit slices well so that they take on a good color. For them we put them in a saucepan with four tablespoons of olive oil and a sliced garlic clove. When they are browned, we reserve the pieces in a bowl.

In the same saucepan where we have fried the rabbit, we put a very well chopped onion in brunoise and then add the green pepper, also very chopped. Add the fried tomato sauce and let everything fry for a couple of minutes.

Add the rabbit slices, the broth and the wine, leaving the stew to simmer. To avoid splashing, we put the lid on the saucepan, stirring occasionally so that it does not catch. After about 30 minutes of cooking it will be perfectly knitted.

Like almost all casseroles, the rabbit stewed with tomato also improves if it is prepared overnight, and is eaten when the flavors are more established. The difficult thing is to resist eating it freshly prepared.
