Crème brûlée cheesecake recipe: French and American never mixed so well

  • Liquid cream 60 ml
  • Wheat flour 30 g
  • Icing sugar 80 g

We will start by preheating the oven to 160 degrees and greasing a mold of about 20 centimeters of removable diameter.

In a kitchen robot or by crushing them with a rolling pin, we powder the cookies. We add the melted butter and a pinch of salt and stir to form a dough with the cookie crumbs. We line with it the base of the mold pressing it with a spoon, the base of the mold and a little the sides. We reserve.

To make the filling, in a large bowl and using a mixer, beat the cream cheese at room temperature together with the sugar. Add the eggs, the yolks, the cream and the vanilla. Stir until all the ingredients are integrated. Add the flour and mix. We put the mixture on the biscuit base.
