Chicken curry meatballs recipe


I've done it again. This time I have mixed a traditional recipe like our classic meatballs with a more exotic recipe like chicken curry. The result has been this recipe for chicken curry meatballs so rich that it will be the one we are going to prepare the next time we invite some friends to dinner at home.

Whether served as an appetizer or starter, or used as a main dish, meatballs always give a great result and are generally liked by everyone.   • Minced chicken breast 500 g
  • Coconut milk 400 ml
  • 2 tablespoons ground curry
  • Stale bread crumbs 60 g
  • Egg 1
  • Onion 1
  • Citronella or lemmon grass, a stem
  • Italian green pepper 1
  • Carrot 1
  • 1/2 tablespoon breadcrumbs
  • Chicken soup 200 ml
  • Sultana raisins 30
  • Fresh coriander some leaves to decorate
  • Wheat flour to wrap the meatballs

How to Make Chicken Curry Meatballs

When we buy the breasts, we ask the butcher to chop them for us in the machine. In a deep plate, mix the chicken with the breadcrumbs, the egg and a tablespoon of curry powder. Mix well with a fork. Besides, we soak the breadcrumbs with a good drizzle of coconut milk, saving the rest for later. When the crumb is very moist, add it to the minced chicken meat and mix well.

We carefully form balls and pass them through flour. We fry them in extra virgin olive oil and leave them in a low-walled casserole. In the same oil where we have fried the meatballs, we poach the very chopped onion together with the carrot that we will also have cut into small pieces.

While they are being made, we cut the lemmongrass in detail until we obtain almost a paste. Add the green pepper and the lemmongrass, letting it cook for a few minutes. Add the other tablespoon of curry powder and the raisins and then a glass of chicken broth.

Once it reaches a boil, add the rest of the coconut milk and let the whole cook for 20 minutes until the meatballs are very tender. We taste and correct the salt and serve hot.

With what to accompany the curry chicken meatballs

These original curry chicken meatballs are excellent to have as an aperitif at friends' gatherings and other celebrations. If you want to have them as a main dish, the best accompaniment is a bowl of white rice and a little chutney.
