Beans recipe with eels in vinaigrette

Today is a very nutritious recipe, as nutritious as the main characters, legumes, are the great forgotten in the kitchen. And you will also be surprised because in 10 minutes or less we have it ready to eat, it is a vinaigrette of white beans with eels.

Let's say that cooking legumes is really cheap but not much more expensive if we are cooking for several people and we are already using cooked beans. In fact, at home we often eat chickpeas or beans in salads in this way and they look really good.

Ingredients for 4 people

  • 1 jar of cooked white beans, 50 g of baby eels, 1 spring onion, 50 g of pickles, 100 ml of extra virgin olive oil, 25 ml of sherry vinegar, 1 tablespoon of mustard and salt.

How to make beans with eels in vinaigrette

We will start by washing the beans to remove all the liquid that they bring from the pot, let them drain and prepare the rest of the ingredients.

In a bowl we will put the finely chopped chives, the gherkins in the same way and the gulas. You don't need to skip them or anything. On the other hand we make the vinaigrette, a French vinaigrette that consists of mixing or whisking the oil, vinegar, salt and mustard.

We mix everything together with the beans and serve or let it cool in the fridge for a couple of hours and serve very cold.
