Laza white bica recipe with Thermomix
Surely we can tell you little about Laza's white bica that you do not know. Some time ago we told you how to make it in a traditional way, but today we have tried to make it with Thermomix. We have loved the result, because it is just as fluffy as the one mentioned, and the process, during which we do not get more dirty than the robot itself and little else.

Before preparing the dough, we line the base and sides of a rectangular 18x23 cm mold with parchment paper, so it will be easier for us to unmold the bica once it is baked. We booked. We turn on the oven at 180ºC, up and down.
We mount the cream that must be very cold. We place the butterfly in the Thermomix glass (clean and dry) and pour the cream. We program at 3 and 1/2 speed without time, being careful to see that the cream has whipped to prevent it from turning into butter. We withdraw another recipient and reserve.
We wash the glass and the butterfly well and dry them thoroughly to make sure that there are no traces of water or dirt. We pour the whites and we mount them to the point of snow, programming 3 minutes at speed 3 and 1/2. If we have just taken the whites out of the refrigerator, we set a temperature of 37ºC to temper them.
After this time, we keep the Thermomix running at speed 3 and 1/2 (without temperature) while we add the sugar by the vowel, by spoonfuls, and then the flour. We turn off the robot and incorporate the cream into the glass, little by little, stirring with enveloping movements and from the bottom up so that the air incorporated with the shakes does not escape.
Fill the mold with the dough and spread it well over the entire surface with the help of a spatula. Sprinkle the entire surface with the sugar from the coating and cook in the oven for 40-45 minutes at medium height. Once cooked, remove and let cool before unmolding and serving.
