Plum sponge cake recipe, the most delicious way to include fruit in our breakfast or snack
We love the variety of fruits that are in the hot season, especially the plums. The bad thing is that we have them all at once in great quantity and this forces us to devise new ways to get them out and prevent them from being lost. That is why we liked discovering this recipe for plum biscuits.
Actually this cake could be used for any type of fruit, or even for a combination of different fruits. The dough is very fluffy and when mixed with the fruit, stronger and more acidic, the result is totally delicious.

- Plums 350 g
- Flour 175 g
- Chemical yeast 1/2 sachet
- Egg 1
- Milk 125 ml
- Butter 70 g
- Brown sugar 60 g
- Flour (for topping) 3 tablespoons
- Butter (for topping) 15 g
- Ground cinnamon (for topping) 1 pinch
- Ground nutmeg (for topping) 1 pinch

We start by washing the plums, we cut them in half, cover them with boiling water and let them warm. Drain, bone, peel and chop. We sift the flour with the yeast and reserve them.
Beat the egg with the milk, sugar and 50 g of butter. We mix both preparations, add the fruit that we had reserved and stir. We preheat the oven to 180ºC.
We prepare the coverage by mixing all the ingredients until obtaining a crumbled paste. We distribute the plum mass in 6 molds and distribute the crumbled pasta on top. Bake about 25 minutes.
