Of course, the handful is somewhat larger than I thought and at home with so much fruit supply, they no longer eat enough, so before they spoil, I thought of making an apricot cake, taking advantage of the fact that I have been left To have a coffee with friends, they are very sweet and I love to see their faces when, looking with sad eyes at a tempting piece on their plate, they say - ohhhh but I'm on a diet! ... well, there will be a little piece I will eat ... but not to despise it "- they are charming.
10 apricots, 100 grams of butter, 150 grams of sugar, 2 eggs, 150 grams of flour, 2 teaspoons of chemical yeast, 2 tablespoons of milk, 1/2 teaspoon of cinnamon, icing sugar (to sprinkle).
The preparation of the apricot cake
We preheat the oven to 180º. We soften the butter, leaving it out of the fridge or putting it in the microwave for a few seconds. We peel the apricots, remove the stone and cut them into pieces. We beat the eggs. We reserve everything.
In a bowl mix the softened butter and sugar, to form a whitish cream. Add the beaten eggs, the sifted milk, flour and yeast. We mix vigorously for a few minutes to get a homogeneous mass.
We prepare the mold where we are going to bake the cake, greasing it with oil, if we want to make sure we can unmold it well, we can put a piece of baking paper in the bottom of the mold with the same shape as the mold and grease it as well.
Pour the dough into the prepared mold, place the apricot pieces on top, push them into the inside of the dough, sprinkle with icing sugar and put in the oven, cook for about 45 minutes or until completely set, we can Check by tapping the cake with a long toothpick and checking that it comes out clean.
Let cool and remove from the mold.
