This fluffy orange cake with orange icing is the perfect recipe to change your snacks

When I discovered this recipe for orange cake with orange icing on Ester's blog I knew right away what the next sponge cake would be, because with the amount of oranges we have at this time of year, I like to vary the way of take advantage of them.

How to make orange cake with orange icing

We start by preheating the oven to 170ºC. Then, in a large bowl, mix the orange peel with the sugar. Add the eggs, beating with a few rods just enough to integrate the ingredients. Add the pinch of salt and cream, without stopping mixing.

When everything is well integrated, we sift the flour with the chemical yeast on top of the mixture and mix again with the rods until just integrated. We melt the butter at 40ºC (heating it just enough to melt it) and add it to the previous mixture, beating again.

Pour the obtained dough into a greased plum-cake mold lined with paraffin paper and bake it for about 35 minutes or until a toothpick comes out clean. We take it out of the oven and let it cool for about five minutes. We remove the cake from the mold, place it on a grid and glaze it.

To make the icing, we put the ground sugar in a bowl and add orange juice very little by little, until we have a semi-liquid texture. To achieve this texture, between liquid and thick, it is very important to add the liquid little by little, so as not to overdo it. To enhance the orange flavor, we can sprinkle the icing with orange zest.
