Zucchini with tomato recipe
Courgettes are one of the ingredients that we can make the most of in the kitchen. We have been showing you lately with an infinite number of ways to cook, prepare and present them. Today I want to show you a juicy, colorful, and above all different way of eating zucchini. It is a recipe for baked zucchini with tomato.
The ingredients for about 4 people are 800 gr of zucchini, flour to flour them, olive oil and salt. For the tomato sauce we will need 1 kg of tomatoes, 1 dl of oil, 100 gr of onion, garlic, salt, pepper and sugar. And finally cheese to gratinate in the oven. I personally like freshly cut Parmesan flakes.
First we will start preparing the tomatoes. We will clean them well and we will make a cross cut on the bottom of the tomatoes. We will introduce them for about 30 seconds to 1 minute in boiling water, so we blanch them and we can peel them perfectly. Taking them out after this time and putting them in cold water to prevent them from continuing to cook.
Then we cut them by their equator and empty the seeds. Then we chop them up.
In a pan with the hot oil, put the onion and the finely chopped garlic and sauté them. When the onion is transparent, add the tomatoes and season to taste.
We will check the acidity of the tomato and if necessary correct with a little sugar. Finally we pass it through a grinder and then through a Chinese so that the sauce is fine.
On the other hand, we prepare the zucchini. We clean, peel and cut into slices of approximately one centimeter. We put a little salt on them (don't forget that the tomato sauce already has salt), we pass them in flour and fry them until they are golden.
Drained from the remaining oil, fry them, put them on a tray and pour the tomato sauce on top. Add the Parmesan cheese or another type of cheese that we like and put in the oven for 15 minutes.
