Galician broth: recipe cooked over low heat and through which you will enter the morriña
If there is any dish that asks to cook over low heat, it is undoubtedly the traditional stews such as this Galician broth, simple stew of vegetables and pork, typical of Galicia. There is no Galician town house that does not get its aroma when we enter, especially on a cold day.
Traditionally this broth is prepared with turnip greens. This vegetable, which is nothing more than the turnip leaves before flowering, has a very peculiar flavor and a very unique and attractive bitter point for some dishes. Even though it is a typical Galician vegetable, it is currently easy to find in specialized fruit shops or Galician product stores in the rest of the Peninsula. Anyway, if it is very difficult to find and you still want to prepare it, you can also substitute cabbage or Galician cabbage.

- Fresh chorizo 2

Soak the beans the night before and the pork if it is salty, soak it in water. In a large and high pot pour two liters of water with a little salt and cook the beans with the meat for an hour and a half or until we see them soft but not undone. Peel and chop the potatoes and cut them by breaking them with the knife, not with a clean cut. Pour them into the broth together with the sausages and continue cooking everything together.
While this is cooking, add the piece of grease. Wash the vegetable and cut it small. Cook it with the rest of the ingredients. When cooked, rectify with salt and leave to rest for a while before serving.
