Belgian roast knuckle recipe, garnished with peas

After these days in which we have so much enjoyed cod and other preparations typical of Easter, we wanted a meat dish and I wanted to make this Belgian roast knuckle recipe with a garnish of peas, which has pleased us today midday.

It is a very simple recipe in which practically all the work will be done by the oven and we will only have to do the preparations and the garnish, so it is very comfortable for these days when we walk with a little chaos at home after the holidays.

Ingredients

  • 1 piece precooked pork knuckle
  • 2 tablespoon tarragon mustard
  • Honey to taste
  • Belgian beer 100 ml
  • Provencal herbs
  • Piquillo peppers for garnish
  • Peas for garnish

How to make Belgian roast knuckle with pea garnish

We buy a pork knuckle that comes pre-cooked. Do not confuse yourself with those that are cooked in the German style, but those that are roasted that are finished in the home oven. We remove the knuckle from its plastic container and spread it with mustard. I have used a very rich and powerful Belgian mustard that I bought in Ghent.

Then we add one or two tablespoons of honey and put the knuckle to bake at 190º in the center of the oven. After ten minutes, we add the beer and the aromatic herbs, leaving our meat to roast for another 25 minutes. Every ten minutes we water the meat with its juices and when it has 20 we turn it over.

We remove the knuckle from the oven when the meat practically falls apart and the bones start to come out. Take care that you do not crumble. To make the garnish, we take advantage of the heat of the oven to sauté some glass peppers roasted in wood.

In a frying pan, sauté some peas and give importance by adding two or three tablespoons of the knuckle sauce to tie them. We serve the knuckle with the peas and the peppers with the sauce aside, crumbling the piece on the table when distributing the portions.
