Today we have a Christmas Eve meal so we have done something light, in fact we have only eaten this potato cream, that is accompanied by some soft-boiled eggs. Oh, and I have made it over, so tomorrow along with what is left over from tonight it will be time to eat again.

Ingredients for 4 people

  • 1 leek, 1 onion, 5 medium potatoes, 1 liter of poultry stock (I cooked it), olive oil and salt.

How to make a potato cream

In a saucepan with a little oil, poach the leek and onion, cut into small cubes. When they are soft, add the peeled and chopped potato and stir.

Then add the broth and cook over low heat for 30 minutes. In the last two minutes we add the cream and stir.

To finish we crush the cream and go through the Chinese to make it finer.

Tasting

We serve the hot potato cream, today I have garnished it a soft-boiled egg (not poached) and a few drops of Modena reduction.
