Baked salted caramel cream, the recipe that will make you go crazy


We are complete addicts to desserts. If we remember, we believe that there is no type of sweet recipe that we disgust. We especially like spoon desserts, but this baked salted caramel cream drives us crazy. It occupies a very special place in our cookbook.

The first time we made salted caramel sauce to accompany a vanilla ice cream, we understood that this recipe was going to be the basis for many others. With it we have made candies (perfect for jpgts), ice cream and, of course, this salted caramel cream. If you imagine a sweet and cloying cream, nothing to see. But this you will have to check for yourself.

  • Unsalted butter 75 g
  • Brown sugar 90 g
  • Liquid cream for cooking 500 ml
  • 1 teaspoon vanilla essence
  • Salt
  • Egg yolks 4

How to make salted caramel cream

We put the butter and brown sugar in a large saucepan. We heat over medium heat until the sugar dissolves completely. Once it starts to boil, cook for a couple more minutes, stirring continuously with a wooden spoon.

We remove the saucepan from the heat and add the cream, mix and put on the fire again. We add the vanilla essence and a pinch of salt. We let the cream boil. Remove the saucepan from the heat again to add the lightly beaten egg yolks, stir quickly without stopping and heat. When the cream is about to boil, we must remove it immediately because it cannot be cut. We strain the mixture into a jug and fill the glasses.

We preheat the oven to 160º C. In a deep source we place the cream glasses and fill with hot water until approximately half of them are covered. Cover with silver foil and bake until the edges of the salted caramel cream have set. We remove the tray from the oven and let it cool completely in the water. We refrigerate until consumption.

With what to accompany the salted caramel cream in the oven

Baked salted caramel cream is a very smooth dessert. Although it may seem the opposite, it is not overly sweet, and it combines perfectly with acidic fruits such as raspberries. We can also accompany this dessert with sour cream, the contrast of flavors is perfect.
