Donnoli recipe, the dessert that is all the rage in America
A few months ago I told you that after the cronuts, a new fusion dessert had been born. This is this recipe for donnoli, a dessert that is all the rage in America and since then I was thinking about preparing it. The name of the dessert is derived from the merger of two words, donuts and cannoli, and that is what this curious sweet is delicious. It is a joint made with donut dough filled with mascarpone cream and cream like the popular cannoli.
To make the recipe, you will need to have some metal tubes that you can find in supermarkets and hardware stores and that will also be useful to make puff pastry or to shape other foods. The recipe is very simple and, of course, it will impress your friends or your family at snack time.
Ingredients for 4-6 people
- For the donut dough: 200 ml of milk, 1 egg, 40 g of butter, 2 tablespoons of water, 375 g of flour, 70 g of sugar, half a teaspoon of salt, and 1 ½ teaspoons of yeast to make bread
- For the filling, mascarpone cheese and whipped cream
How to make homemade donnoli
We slightly heat the milk to about 35 degrees. Make a volcano with the flour, sugar, salt and yeast mixed in a bowl and add the milk and water. We also beat the egg and melt the butter and mix everything together, until you get a sticky dough.
Let the dough rest in a clean bowl and cover it with kitchen film, leaving it to ferment for about an hour. Then we spread a little flour on the counter and we cut portions of dough and stretch them like elongated cylinders kneading as if it were modeling clay.
We roll each cylinder around the metal tube, until it is well covered. Fry the donut dough joints two by two in sunflower oil at 180º, turning so that they are made evenly. We remove the tube and let them cool on absorbent paper, while we repeat the operation until the mass is finished.
To make the donnoli filling, beat the mascarpone with energy and mix it with whipped cream giving enveloping movements. We put the resulting cream in a sleeve with a curly nozzle and use it to fill the tubes of donut dough once they are cold.

The donnoli are delicious, especially on the first day, when the dough is fluffy. Just as it happens when we make homemade donuts, donnoli can be consumed in the days following their elaboration, if we take the precaution of filling them at the moment that we are going to eat them.
