Lollo rosso salad recipe with duck ham
Our colleague Eunice updates us periodically on everything we publish regarding diets and healthy living. This recipe for a lollo rosso salad with duck ham is a good way to have a light, complete and balanced dish, complemented with the proteins of such a rich meat.
It is inspired by the salads that I have had in the south of France, around Toulouse, where they combine vegetables with different products of the duck, so abundant in those lands. And of course, the Italian touch of lollo rosso, which is my favorite lettuce, because of its flavor and its spectacular red color.
Ingredients for 4 people.
A lollo rosso, or an escarole, or a mixture of both, 150 gr. smoked duck ham, 150 gr. cherry tomatoes, a thick slice of bread, 100 cc. extra virgin olive oil, 3 tablespoons of flower honey, a tablespoon of aromatic herbs (thyme, oregano), juice of half a lemon, a pinch of salt, a teaspoon of Dijon mustard.
Wash and drain the vegetables well, chopping by hand. Place in a salad bowl or large plate.
Add the cherry tomatoes, halved. Cut the bread into cubes and toast in the oven or on a griddle with a pinch of oil, until lightly browned. Add to the salad.
Finally, decorate with the thin slices of smoked duck ham. Mix the oil, herbs, mustard, honey and lemon juice in a glass jar, with a pinch of salt and pepper. Cover and shake well until lightly emulsified.
Pour the honey and lemon vinaigrette over the salad just before serving.
Preparation time: 10 minutes.
Serve this delicious and light Lollo Rosso Salad with Smoked Duck Ham on the spot, as a starter or as a light dinner. Try to remove the duck ham from the cold well in advance, to better appreciate its delicate flavor.
