Green asparagus and surimi salad recipe
The salads are for the summer, well and also for the rest of the year. This could be the entertaining and long title of a salad recipe book or perhaps gastronomic anecdotes of the summer, but at the moment it has only remained in one sentence to introduce the recipe for asparagus veres and surimi salad.
What ingredients should a salad have? For me there are three almost essential: mayonnaise, tuna and egg. If you have these three in the fridge with which you add two or three more different ones, you will already have a perfect salad.
- 1 bunch of asparagus, 3 tablespoons of mayonnaise (which we will make with 1 egg, 150 ml of olive oil, 1 teaspoon of salt and the juice of half a lemon), 50 g of tuna in oil, 8 surimi sticks and two eggs cooked
How to make green asparagus and surimi salad
First we remove the woody part of the asparagus, wash them and cut them into small pieces that we will boil in water with a little salt for about two minutes. Then we cool them with cold water and reserve.
On the other hand, we crumble the tuna, cook the eggs to make them hard and cut the surimi sticks. We also make mayonnaise, very simple with a mixer. We will only have to beat the egg, the lemon and the salt and add the oil little by little.
Finally, we mix all the ingredients and leave in the fridge.
